Soba Noodles with Miso-Sesame Sauce

This is a great dish for providing general nutrition and make a quick and satisfying lunch or dinner.  We recommend serving with extra vegetables such as stir-fried mushrooms or bok choy.
Ingredients
  • 1 Medium Cucumber
  • 1 Sheet of nori sweet seaweed (optional)
  • 8 oz dried soba noodles
  • 1/2 cup of water plus extra for cooking the noodles
  • 4 tablespoons of white miso
  • 3 1/2 tbsp tahini or sesame paste
  • 2tbsp lemon juice
  • 1tbsp mirin wine
  • 1 piece fresh ginger, peeled and grated
  • 1 medium carrot, peeled and cut into match sticks 
  • 2 green onions, chopped and roots and tough tips discarded 
Directions 
  1. Peel the cucumber. Slice in in half lengthwise and scoop out and discard the seeds.  Cut into matchstick-shaped pieces
  2. Cut the nori into 1/4 by 1/2 inch pieces and set aside
  3. Cook the soba in boiling water for 4 to 5 mins until al dente, then rinse, drain, and set aside
  4. Warm the 1/2 cup of water
  5. In a small bowl mix together the miso, tahini, lemon juice, mirin, and grated ginger.  Add the warm water a little a time until the mixture is desired consistency (don't worry if there is left over water)
  6. Place the noodles, cucumber, carrot, and green onions in a serving dish and toss with the sauce. Garnish with Nori.  
  7. Add any extra veggies you like! I often add cooked soy beans and broccoli
